Quick Facts:
- Skin Color: Light tan/buff with a smooth to slightly netted texture, shallow eyes
- Ease of Growing: Very Easy — one of the most forgiving varieties
- Flesh Color: Creamy white
- Maturity: Mid-season (90–110 days)
- Yield: Very High, 1 lb planted will typically result in 10–20 lb harvested, consistently produces large, uniform tubers
- Planting Rate: Usually 5–8 seed pieces per lb, space 9" to 12" apart in row
- Cooking Type: Fairly floury (mealy), excellent for baking, frying, and chipping; also very good boiled or mashed
- Disease Resistances: Resistant to late blight (foliage and tuber), PVA, and common scab; moderately resistant to early blight, black leg, and PVY; susceptible to potato wart and golden nematode in some regions
Culinary Use:
Kennebec is the classic “all-purpose” potato. It makes thin, crispy chips straight from the garden to fryer, fluffy baked potatoes, light mashed potatoes, and golden french fries. Its high starch content and balanced flavor have made it a longtime favorite of commercial chip processors (it was once the #1 chipping variety in the eastern U.S.).
History:
- Origin: Developed by the USDA and Maine Agricultural Experiment Station in Presque Isle, Maine
- Breeding: Released in 1948 from a cross between Chippewa and Katahdin
- Introduction: Named after Maine’s Kennebec River, it quickly became the dominant variety in the Northeast and Midwest for fresh market, chipping, and processing due to its reliability and storability
