You are able to harvest parsnips from the beginning of autumn to as late as January in most climates. Once the foliage has died back you can harvest parsnips using a potato fork to loosen the soil around the root and then pull straight up using the foliage. During cooler temperatures, the earth can be used to store roots until you are ready for them.
